It’s kind of a shame that sweet potatoes don’t get clever soundbites in epic fantasy films. These are tasty tubers! In honor of National Cook a Sweet Potato Day February 22, we thought you should know where our sweeties come from and all the unique ways you can cook ’em.
We’re stocked up on these tasty bois year-round at all Co-op locations thanks to our local partner, Laughing Child Farm. (Side note: they call sweet potatoes “sweeties.” Isn’t that great? Following suit, we use this nomenclature regularly.)
Located on a beautiful stretch of rich farmland in Pawlet, VT, Laughing Child Farm is family owned and run, with a harvesting year that’s a little backward from most farms. The most intense periods fall in June and then again in September through March, which means our friends at Laughing Child are busy now stocking our shelves daily with the best sweeties you’ll find anywhere.
Sweeties are high in Vitamin A and C, as well as manganese and fiber. They also contain Vitamin B6, potassium, and antioxidants, and support healthy vision and gut health.
Best of all, there are endless ways to enjoy! So in honor of National Cook a Sweet Potato Day February 22, we’re happy to turn it over to the experts. This weekend, pick up some Laughing Child sweeties, try one of the family’s famous recipes, and enjoy!
