The days are getting longer, the temperatures growing warmer, and our Prepared Foods Department is bursting with new, vibrant flavors! At the Co-op Kitchen, our chefs have been busy creating a spring menu that celebrates the season’s freshest ingredients, making it easier than ever to enjoy delicious, wholesome meals without the fuss.
At the Co-op we believe that good food should be both convenient and delicious. That’s why we’re launching a menu with grab-and-go options, hearty stews, refreshing salads, and more, all made with the same commitment to quality and local sourcing you’ve come to expect. Here is just a sampling:
Vermont Beet Bliss: Our Roasted Beet Salad. Dive into a bed of crisp greens crowned with sweet, earthy roasted beets, straight from our friends at Just Cut, a social enterprise that connects Vermont growers with retailers. It’s a colorful, nutrient-packed salad that’s perfect for a light lunch or a vibrant side dish.
Pesto Perfection: The Turkey Pesto Sandwich. Lunchtime just got an upgrade. Our Turkey Pesto Sandwich features tender Farmer’s & Cooks Roast Turkey, paired with the irresistible, nut-free pesto from Vegetaball’s. It’s a flavor explosion that’s ready when you are, and grill-ready for a warm alternative.
Southwestern Comfort: Pork & Green Chile Stew. Warm up with this hearty and flavorful blend of local pork and zesty spices. It’s the perfect comfort food for those transitional early spring days.
Light & Lively: Southwest Chicken Salad. Ditch the mayo! Our Southwest Chicken Salad is a protein-packed powerhouse, bursting with zingy flavors and a light, refreshing dressing.
Gourmet Grab & Go: Grilled Vegetable Stuffed Chicken Breast. Elevate your lunch or dinner with our Grilled Vegetable Stuffed Chicken Breast, filled with seasonal grilled vegetables and served with our signature “supreme” sauce (a decadent blend of Joe’s Kitchen stock, Cabot butter, King Arthur flour, and McNamara half and half). Trust us, this is a restaurant-quality meal you can enjoy on the go. Also available hot, with cider-glazed carrots as a side dish option.
We’re passionate about supporting local farmers and producers, and this spring menu is a testament to the incredible bounty our region has to offer. Stop by, try something new, and let us know what you think!
